summer vacation took me hostage.

I started this blog to share ideas on our natural family life....then summer came. ;) Now we are in the full school swing again. This summe was full of ups and downs. We are in the process of selling our home and Chris is working in the deep south. Ok, deep South Texas. We found a great home down there, and we are so close with our house sale. <3 Prayers appreciated.

I have been doll making hard core, and added the cutest doll papooses to my line up! <3 They are so fun and I thank everyone for their support in my little business. :)

I leave you with a picture of my daughter and her newest mama made doll. I was trying some new things, and oops a couple of things. So, Lauren has a new doll.

remember what you put in their mouths....

our 3rd daughter Stella has a bad food allergies. so we have really learned to cook as close to homemade as possible.
one thing that she likes to have on the go or on one of her fussy days is happy baby pouches. They are amazing. I am so excited that our Target started carrying a wide variety of the pouch foods, yogurt melts, cereals with probiotics, and more!! :)

The Happy Baby Pouches are so easy to toss in your purse or diaper bag. Stella has a backpack she takes to church nursery when we attend church and Bible Study times. We pack one pouch, a fruit, and a organic juice box or some water. Easy for the workers and she can squeeze the pouches right in her mouth.
Its also a good way to get some fruits and veggies in her. She is very hot/cold about eating sometimes. Typical toddler!!

Their mission statement is amazing.

I am going to host a Happy Baby giveaway. 10 of our favorite Stage 2 pouches!! :)
Leave a comment below!

Also if you want an extra chance go and follow my store, Stella Grace on FB. Leave your name and that you follow Stella Grace Boutique. <3

**i just wanted to note that I am not being paid by Happy Baby. This is our view on the product and a wonderful way to support our children's natural living lifestyle.

we eat healthy meals....roasted eggplant

we eat healthy meals. at least 2 meals during the week are meat free. it helps to save us a bit of money, cause feeding 4 little mouths is NOT cheap these days!!! <3

here is one of my recipes, saw this in a magazine and made my own twist of it.

Roasted Eggplant
items needed:
-2 eggplants
-grape tomoatoes
-garlic (fresh)
-fresh sliced mozzerella cheese
-quinoa
-spring salad mix
-cucumbers

First I cut the eggplant in half, put it in a glass casserole type dish, drizzle in olive oil and add on minced garlic. Bake at 400* for about 45 minutes. I add on the tomatoes on the top of the roasted eggplant, and broil them for 3 or 4 minutes. Top with the roasted mozzerella, and wait til its bubbly. Yums.

I also made quinoa. Its ver delish and SO very good for you. Glueten free?? Bonus, so is quinoa!
I made 2 cups since we have a larger family, but if you buy it in bulk as we do you can control how much you make.

Spring salad with cucmbers and some of the leftover tomatoes. I kept a few slices of the mozzerella on the side to add in our salads. Topped with a balsamic vinegarette and dill.

I present our dinner!

And it was just as delicious as it looks. So good for you, my girls ate it UP!!!! :) Its a great way to get tons of veggies in your kids.

Next dinner post will be by Chris, he made an amazing dinner for us the other night which we will share tomorrow!! :)
